MANIHOT ESCULENTA. Manihot Esculenta-Casava
Common name: cassava, manioc, yuca.
Family: Euphorbiacea.

A perennial shrub of approximately 6 feet in height palmate leaves and green flowers. It propagates vegetatively by cuttings from the stem. Cassava is grown for its enlarged starch-filled tuberous roots.
There is a bitter, poisonous, and a sweet, nonpoisonous, variety.
The peeled roots of the sweet variety are usually eaten cooked or baked.
The bitter ones are grated, deluted in water and pressed in a cylindrical, basketwork "press" to extract the juice. The paste is baked into pancake-like bread while the extracted juice is fermented into a strong liquor.
