Appearance: Dried and cut Color: Green Remarks: Store dry (not in the refrigerator) Origin: Mexico A much used herb in the Central America cuisine. The taste is strong, and has somewhat of a tangy flavor; it is used to flavor beans and fish. Since it is a carminative (gas reducer); it helps avoid the gastric discomfort that may occur after eating beans. Try the Epazote in soups, with shellfish and eggs or as an ingredient in quesadillas. Try it also in Burriquitas (Mini Burritos) and salads. Epazote combines well with other Mexican seasonings. Epazote also has medicinal applications. Recipe QUESADILLAS WITH EPAZOTE Time: 5 minutes. Yield: 6 servings. Cooking time: 30 seconds. Ingredients: Fold each tortillas in half; wrap in microwaveable paper towels. Microwave until cheese is melted, 20 to 30 seconds. Alternatively, cook in skillet sprayed with non-stick vegetable oil spray. Heat the quesadillas, turning once or twice, until cheese is melted. 2. Cut into halves and serve with salsa. |
